Garden Cucumber Lemon & Mint Fizz

Hello, meet the perfect spring cocktail! There is nothing better than a garden cocktail no matter where you are in the world. This one combines refreshing cucumber with tart lemon & cooling mint for an amazing happy hour drink. You could easily replace the Gin in this for Vodka but I absolutely love how the botanical notes in Gin elevate the flavors of this drink. Cheers!


Ingredients

(makes 2 cocktails)

  • Half of cucumber - cubed (about 4 inches of cucumber if you buy a giant one)

  • Palmful of Organic Mint (about 8 leaves)

  • Juice of 1 Lemon

  • 1/2 ounce of Organic Maple Syrup

  • 3 ounces of Gin

  • Splash of plain bubbly water

Directions

  1. Prepare two coupe glasses by rinsing and drying.

  2. In a cocktail shaker, add in the cucumber, mint, lemon and maple syrup.

  3. Using a muddler, muddle all in step 2 for about 30-40 seconds.

  4. Add in the Gin & handful of ice cubes.

  5. Shake vigorously!

  6. Strain into the prepared couple glasses.

  7. Add splash of plain bubbly water.

  8. Garnish with a thin slices of cucumber and a sprig of mint.

  9. Enjoy!
