Vegan Irish Oatmeal
Oatmeal may not sound exciting but on a cold winter morning, a simmering pot of creamy Irish Oatmeal is just about heaven. When I was younger sometimes I would meet my dad for Breakfast before school and I would always order the warming bowl of Irish Oatmeal. It was so comforting and would just make my heart sing with every bite! When I am not baking a storm, I don’t typically keep any dairy products in my home so today I decided to make a simple Vegan version of this childhood favorite. Enjoy!
Ingredients
1 Cup of Organic Oats / Bobs Red Mill has my favorite kind but the traditional McCanns Irish Oatmeal is always an amazing choice as well.
2 Cups of Organic Oat Milk (or any plant milk of choice)
1 Cup of Filtered Water
1 Teaspoon of Cinnamon
1 Teaspoon of Vanilla Paste (or extract if not available)
1/4 Cup of Organic Maple Syrup
1/4 Teaspoon of Sea Salt
Spoonful of Organic Brown Sugar (for topping)
Directions
Add Oats to a medium sauce pan or my favorite The Always Pan over medium heat.
Add in Oat Milk + Water and stir to combine.
As the mixture warms up add: Cinnamon, Vanilla Paste, Organic Maple Syrup and Sea Salt. Stir until combined.
Cover & let mixture come to a light boil.
Turn the stove to simmer and let sit for 20 minutes. IMPORTANT: stir frequently! if you don’t stir the plant milk will create a film over your oatmeal.
Once your oatmeal is thickened and jiggly, spoon into a bowl and top with a spoonful of brown sugar while it is still warm!
